Tempt My Tummy Tuesday

Tempt my Tummy Tuesdays

I love Crock Pot Meals. I may have to find more recipes or a cook book or something
but my friend shared this one I want to try
Chicken and Dumplings:

1 1/2 pounds of chicken (whatever you have)
2 medium potatoes diced
2 cups baby whole carrots
1 medium onion
5 cups chicken broth
2 cups biscuit mix
1/2 cups water
2 teaspoons parsley

place chicken potatoes onion and carrots into slow cooker.
add broth and let cook for 9- 10 hours on low heat setting
About an hour before done increase heat setting to high.
Stir together biscuit mix with water and parsley in bowl.
Drop dough by rounded tablespoons onto hot chicken mixture in slow cooker.
Cover and cook for the last hour or until dumplings are dry in center.

PREP Time: 10 mintues
Cook Time: 9-10 hours
Serving: 5 people

P.S. I also like to season the chicken with a little bit of salt and pepper and italian seasoning.

Taco Lasagna

You will need 1 lb Lean Ground Beef, Taco Seasoning, Tortillia's, Shredded cheese and or Cheese Sauce, and toppings as desired and refried beans if desired

We buy the Tomato Trinity Mix or the Pico Da Gallo Mix depending on the supermarket we shop at. We put shredded Mexi blend between layers and cheese sauce on top.

1. Cook a great Filling
Heat oven to 350°F Brown ground beef in 10-inch skilet, drain. Stir in Water and Seasoning Mix, Heat to boiling. Reduce Heat, simmer uncovered 3-4 minutes, stirring frequently until thickened.

2. Assemble the layers
Place 1 tortilla in the bottom of ungreased 9 inch glass casserole dish or metal pie pan. Spoon over ½ cup of beef filling onto the tortilla, spread evenly to edges. Repeat layers, ending with beef filling. **At this point you can use shredded cheese or cheese sauce (whatever you prefer) and add a layer. You can also add a Tomato Trinity Mix or Pica Da Gallo mix between layers and/or the refried beans. You can add several layers repeating this step until you have your desired amount (usually about 4)

3. Bake it Up
Bake uncovered about  15 minutes or until heated through. Top as Desired. Serve with a side of salsa for added zing :)

    Tempt My Tummy Tuesday

I am going to go ahead and fess up. I am not a crunchy mama. I don't use all organic or anything like that. I even let my kids have snacks and eat McDonald's on occasion. We don't eat there very often because we prefer Chick Fil A and Whataburger. They use fresh ingredients. But Rick and I do need to loose weight. I have Thyroid problems and he has Thyroid and Cholesterol problems. So I have been looking on Sparkpeople for healthy recipes and other places. I am not a cook at heart. I can follow a recipe (most of the time). I don't like too many fried foods or fattening stuff. But Rick and James are picky eaters who will eat Hamburger Helper. I can't touch the stuff I see the grease and fat YUCK!
I am a veggie and fruit eater. I will eat almost every one you put around me. Last night we had Garlic Chicken. It has Carrots and the Carrots were so full of flavor now I am craving them! I hope there is left overs for lunch!
So if you have any fairly simple, easy and cheaper healthy meals to share I would love to try them...

    Tempt My Tummy tuesdays

    Blessed with Grace

So my mom is the type of cook that doesn't use measurements. I remember when I was little my mom would make chicken in a bowl with rice and it had a bit of a kick. I have been craving this too lol. but when i ask her how to make it she's like its just a couple of boneless skinless chicken breasts in a pan with an inch or so of water with dried rice and cook in the oven. Okay but for how long What spices? she doesn't know lol But I WANT SOME!

Temp my tummy part 2.. So I could eat at Zaxbys, Buffalo Wild Wings, or Bumhauers Wings like every week. So I think I should learn to make lemon pepper wings and buffallo wings. If you have any tips please leave me a comment.

    Tempt my Tummy Tuesdays

    Blessed with Grace

So last month I posted about a Cinnamon Tea Cake recipe that was from my childhood. I try to cheat my cellulite and tell myself its healthier because it lacks frosting haha. Here is the blog post here

I haven't made it into a cake yet just cupcakes and well I think its easier to glaze them....

So here is how I do it...
I like Skylar's help on this too.
We get a yellow cake mix (or from scratch if your the not so fast mom lol)
We grease and line the cupcake cups with cinnamon. Sometimes I sprinkle Cinnamon in the batter too. Depends on how you like your cinnamon lol. bake with the directions on the box.

Once the cupcakes are done and cooled.
In a saucepan melt 1 tablespoon of butter with 1 tablespoon of white sugar and a ½ of a teaspoon of cinnamon to create a glaze. I turn each cupcake upside down and run through the glaze to cover the top of the cupcake. Then I sprinkle each with a cinnamon and sugar mix (I keep it on hand because I love Cinnamon Toast and Cinnamon on my bagels)
    So yum!

Also those who are interested in my Hungarian Goolash

    Tempt My Tummy Tuesdays

This momma is sick with a bug of some type or a killer cycle. Anywho I think I am going to take it easy on my stomach and just make some chicken soup from a box hehe and enjoy it and let my favorite Soldier take care of the lil ones.

I wanted to bake a Cinnamon Tea Cake. Its a yummy thing my "adopted mom" used to make me and I never put two and two together to make it for myself. Then one day at our Dave Ramsey Class there it appeared and the taste was like a reminisce of YUM. I asked the baker for the recipe (she was also taking the class) She got short with me and told me NO I couldn't have the recipe it was her prize winning cake and she planned on opening a bakery with this signature cake. HA!

Alrighty then. So I googled it and I am going to give a try. But today my stomach isn't up to par. I am under quarantine and just taking a half of a day off. Maybe Saturday if I am not busy or Monday afternoon once Skylar comes home from school.

My mom used to make Chicken and Rice when I was real little and we didn't have a lot of money. I asked as an adult what she did and my mother is one of those cooks that doesn't do recipes she doesn't measure she is just like auto pilot... All she said was take some chicken breasts into a pan with a little water and rice and it will cook up... I know there is more too this but WHAT? I want some!

Country Garden Chicken and Cheesy Grits

I think most publix grocery stores have a little place where they actually show you how to cook and prepare a meal. Its super yummy. I pick up all kinds of recipes from there and I particularly love this one. Even if your not a fan of grits they don't resemble grits and the chicken is too yummy to pass up.

    Ingredients
    3 tablespoons of canola oil
½ cup of chicken breading mix
1 lb of boneless chicken cutlets
1 tablespoon + 1 cup of water, divided
¼ cup pre diced fresh tomatoes
¼ cup of pre diced red onion
    2 teaspoons vegetable seasoning blend
1 (1.32 oz) packet of country gravy mix

    1. Place oil in large saute' pan and heat on medium high 2-3 minutes. Place breading mix in shallow bowl. Moisten chicken with 1 tablespoon of water. Coat chicken, one piece at a time, by pressing into breading mix with fingertips; turn and coat other side. (For thicker breading coat twice.) About half of the sodium in the chicken recipe comes from the breading mix. You can reduce the sodium if you choose to only lightly coat the chicken before cooking.

    2. Place chicken in a hot oil (wash hands); cook 6-8 minutes, turning occasionally, or until crisp and golden. Remove chicken from pan; cover to keep warm.

    3. Stir tomatoes, green peppers, onions, and vegetable seasoning, into pan with drippings. Cook on medium high 2-3 minutes or until onions are translucent.

    4. Stir in gravy mix and gradually add remaining 1 cup water, stirring continually, or until sace is smooth. Reduuce heat to low; cook 2-3 minutes, stiring often, or until thoroughly heated. Serve sauce over chicken.
